I love sweet treats! I blame my sweet tooth on my dad. He was always the one (and still is) who volunteered to make a late night Ben & Jerry's run or stop on road trips for a king size Reses. So when I decided to eat plant-based, I knew I had a big problem on my hand when it came to getting my fix. But luckily there are so many ways to "veganize" many typical sweet treats. Here are just a few.
Some of these are tweaked from other recipes and some are just straight up experiments. (again, I have provided no measurements so, unlike other food blogs, you'll have to get a little creative), but hey thats kind of the point.
Ferrero Rocher Date Balls
Pitted dates
Chia seeds
Natural peanut butter
Cinnamon
Hazelnuts (whole and chopped)
Dark chocolate
Coconut oil
Put dates in food processor
Combine with pb, chia seeds, & cinnamon
Roll each date mixture around one whole hazelnut & put in freezer
Melt choco and coco oil in bowl
Cover date balls in choco and place on parchment paper
Sprinkle chopped hazelnuts on top & freeze
Granola Bars
Medjol Dates
Peanut butter
Coconut oil (melted)
Oats
Pumpkin seeds
Quinoa
Nuts of choice (chopped)
Cinnamon
Cacao nibs or began chocolate
Dried Cranberries
Optional* coconut flakes
Bake oats, pumpkin seeds, quinoa, nuts @ 375 for 5-7 mins
Food process dates, pb, and coco oil
Combine all ingredients in bowl and spread on brownie tin, chill overnight
Protein Cookie Dough/ Cookies
*can be baked into cookies or just eaten as cookie dough balls
Chickpeas
Dates, pitted
Peanut butter
Rolled oats
Coconut oil 1 Tbsp
Finely chopped hazelnuts
Baking powder ½ Tbsp
Salt 1 tsp
Vegan chocolate chips (or cut up bar)
Soak dates for 15 mins.
Heat coconut oil and pb in microwave.
Combine all ingredients.
Fold in chocolate chips.
Make big ball and chill for like 30ish mins
Place on cookie sheet and flatten with cup
If baking into cookies, bake for 10-15 mins @200 deg C
Naner & Carrot Spice Cookies
Ripe bananas
Natural peanut butter
Dates
Shredded carrot
Rolled oats
Ground almonds or almond powder
Salt
Pumpkin seeds
Ground Cinnamon
Ground Nutmeg
Ground Allspice
Ground ginger
Ground clove
Baking powder
smash naners; add all other ingredients except dates
chop dates and add to mixture
bake on 375 F for however long you want
Take Five (With or W/O Pretzel)
medjool dates
vanilla extract
peanuts (chopped)
peanut butter
vegan chocolate
sea salt
pretzels
Blend dates, splash of vanilla, and a bit of sea salt in food processor.
spray mini muffin pan with some sort of nonstick nonsense.
fill mini holes 1/3 ish full with the date mixture.
Add pb and sprinkle peanuts for next layer.
Melt choco with maybe a bit of coco oil and drizzle for top layer, add pretzel and more sea salt. Freeze.
